Vegetarian Shepherd's Pie

INGREDIENTS

  • 6 - 8 tbsp All of Oils Olive Oil of your choice
  • 2 garlic cloves chopped (or more)
  • 1 onion chopped
  • 15 crimini mushrooms chopped
  • 1 bell pepper chopped
  • 1/2 cup cherry tomatoes chopped
  • 1 can chickpeas drained and rinsed
  • 1 can black beans drained and rinsed
  • 4 carrots chopped
  • 3/4 cup frozen peas
  • 6 medium potatoes chunked
  • 1/4 cup milk
  • 3 tbsp butter
  • 1 cup grated cheese of your choice
  • 3 tbsp cumin
  • 2 tbsp chili powder
  • 1 tbsp ground black pepper
  • 1 tsp salt of your choice
  • 1 tsp cracked chili peppers

DIRECTIONS

  • Make mashed potatoes (skin on for max flavour) using milk, butter and salt.
  • Steam carrots and peas until almost done.
  • Saute in skillet garlic, onions, mushrooms and pepper in Olive Oil until soft.
  • Add tomatoes and beans to skillet. 
  • Add spices to taste. 
  • Simmer for 5 mins.
  • Coat bottom of casserole dish with Olive Oil 
  • then a thin layer of mashed potato.
  • Add contents of skillet and spread evenly. 
  • Sprinkle 1/3 of cheese evenly.
  • Add peas and carrots and spread evenly. 
  • Cover all with remaining mashed potatoes. 
  • Toss remaining cheese evenly over top.
  • Sprinkle cracked chili peppers over top.
  • Bake at 350 degrees 35 - 45 mins until top is 
  • golden brown.
  • Let stand for 5 - 10 minutes.
  • Drizzle Olive Oil of your choice on top 
  • immediately before eating.
  • Serves 4 - 6
