Vegetarian Shepherd's Pie
All Of Oils
INGREDIENTS
- 6 - 8 tbsp All of Oils Olive Oil of your choice
- 2 garlic cloves chopped (or more)
- 1 onion chopped
- 15 crimini mushrooms chopped
- 1 bell pepper chopped
- 1/2 cup cherry tomatoes chopped
- 1 can chickpeas drained and rinsed
- 1 can black beans drained and rinsed
- 4 carrots chopped
- 3/4 cup frozen peas
- 6 medium potatoes chunked
- 1/4 cup milk
- 3 tbsp butter
- 1 cup grated cheese of your choice
- 3 tbsp cumin
- 2 tbsp chili powder
- 1 tbsp ground black pepper
- 1 tsp salt of your choice
- 1 tsp cracked chili peppers
DIRECTIONS
- Make mashed potatoes (skin on for max flavour) using milk, butter and salt.
- Steam carrots and peas until almost done.
- Saute in skillet garlic, onions, mushrooms and pepper in Olive Oil until soft.
- Add tomatoes and beans to skillet.
- Add spices to taste.
- Simmer for 5 mins.
- Coat bottom of casserole dish with Olive Oil
- then a thin layer of mashed potato.
- Add contents of skillet and spread evenly.
- Sprinkle 1/3 of cheese evenly.
- Add peas and carrots and spread evenly.
- Cover all with remaining mashed potatoes.
- Toss remaining cheese evenly over top.
- Sprinkle cracked chili peppers over top.
- Bake at 350 degrees 35 - 45 mins until top is
- golden brown.
- Let stand for 5 - 10 minutes.
- Drizzle Olive Oil of your choice on top
- immediately before eating.
- Serves 4 - 6
